The North Idaho Coffee Brand That’s Actually Fighting Back Against Big Coffee

There is coffee that gets you through the morning, and then there is coffee built around an entire philosophy.

On this episode of North Idaho Experience, Dave and the team sit down with Ronnie Watson, founder of Defiant Coffee, to talk about functional mushroom coffee, health, fatherhood, resilience, North Idaho roots, and why more people are looking for a simpler, more intentional way to live.

What starts as a conversation about caffeine quickly becomes something much bigger.

For Ronnie, “Defiant” is not simply a coffee brand. It represents refusing to accept that getting older automatically means slowing down, losing strength, or abandoning the activities that make life meaningful.

A Coffee Company Born in Coeur d’Alene

Ronnie launched Defiant in 2017 after spending years working in the energy drink industry.

As he moved into his late 30s and became a father, his priorities began changing. He still wanted to wakeboard, train hard, spend time outdoors, and keep up with his family—but he was also becoming more interested in what he was putting into his body.

That led him into the world of functional mushrooms.

Today, Defiant produces ground coffee and nitro cold brew incorporating lion’s mane, chaga, and cordyceps. According to the company, its mushroom ingredients use fruiting bodies grown in the United States, with coffee products built around a simple-ingredient approach.

For Ronnie, that combination became a way to blend two things he already valued: the ritual and energy of coffee with his growing interest in nutrition and performance.

What Are Functional Mushrooms?

Mention mushroom coffee and some people still picture something psychedelic.

That is not what Defiant is making.

Functional mushrooms are non-psychoactive varieties used in foods and supplements. Defiant’s formula includes three:

Lion’s mane is commonly studied for possible effects involving cognition and the nervous system. Chaga contains compounds with antioxidant activity. Cordyceps has attracted particular interest in sports nutrition and exercise research.

It is important, however, not to turn promising research into medical claims.

Recent reviews of human studies on cordyceps have found some potentially positive results involving exercise capacity and performance, but the evidence remains limited and inconsistent. Researchers continue to call for larger, better-controlled studies before definitive recommendations can be made.

In other words, functional mushrooms are an interesting area of nutrition research—not a replacement for medical treatment.

That distinction also reflects the tone of the podcast. Ronnie talks about why he chose these ingredients and his personal experience with them without positioning a can of coffee as medicine.

From Processed Convenience Back to Simple Ingredients

The conversation eventually moves beyond coffee into something increasingly common among North Idaho residents: paying closer attention to where food comes from.

Ronnie grew up in North Idaho in a family with deep local roots. His grandparents and great-grandparents included loggers and farmers, and he remembers stories of a time when families produced food that was shared or sold within the community.

That lifestyle feels far removed from modern grocery aisles filled with highly processed products and ingredient labels requiring a chemistry lesson.

For the hosts and Ronnie, the goal is not perfection.

Sometimes you eat the candy bar. Sometimes you drink the whiskey. Sometimes life gets busy.

The larger idea is making simple, whole foods the foundation rather than the exception.

It is part of why local businesses such as Pilgrim’s Market have become such fixtures in Coeur d’Alene. Founded in 1999, Pilgrim’s built its business around natural, local and organic foods long before those categories became mainstream.

Defiant Coffee is available there as well, connecting a locally founded brand with a store that shares many of the same customers.

More Than Coffee: The Meaning of “Defiant”

One of the most interesting parts of the episode comes when Ronnie explains how the meaning of Defiant has changed.

Originally, it represented staying active.

Keep wakeboarding. Keep training. Keep showing up as a dad. Refuse to decide that a certain birthday means your best years are behind you.

But after going through difficult personal experiences, including divorce and major life changes, the idea became more serious.

Defiance began to mean resilience.

It meant finding healthy ways to keep moving when life was difficult and recognizing that men sometimes need other men around them.

That has led Ronnie toward building what he describes in the episode as the Defiant Brotherhood: a community centered around training, outdoor experiences, physical challenges, cold plunges, sauna, breathwork, and simply spending time with other men.

Fifteen Acres and a Different Kind of Men’s Community

Ronnie owns approximately 15 acres near Fernan and envisions using the property as a place where men can train together outdoors.

Not a polished fitness studio.

Think trails through the trees, carrying rocks and logs, mace training, cold water, sauna, loud music, and challenging workouts.

The idea taps into something that appears throughout many North Idaho Experience conversations: people are craving real-world community.

Modern life can be incredibly convenient while also being strangely isolating.

You can order groceries without leaving your couch, work without seeing another person, communicate through a screen, and pay someone else to do nearly every physical task in your life.

Ronnie’s approach intentionally moves in the opposite direction.

Pick something heavy up.

Carry it.

Get outside.

Learn a skill.

Train with your friends.

Have conversations when life is difficult instead of pretending everything is fine.

Why This Fits North Idaho

There may be no better place for this philosophy than North Idaho.

This region still has a strong connection to outdoor recreation, local food, blue-collar skills, small businesses, farming, hunting, fishing, and families that value self-reliance.

People hike for huckleberries instead of buying everything in a package. They hunt for morels in the spring. They grow gardens, raise chickens, split firewood, build shops, and look for acreage where they can create a more hands-on lifestyle.

Not everyone in North Idaho lives that way, of course.

But the opportunity to do so is still here.

And that is ultimately what makes Ronnie’s story interesting. Defiant Coffee may begin with a cup of mushroom coffee, but the brand reflects a much larger idea.

Stay active. Pay attention to what you consume. Build real friendships. Support local businesses. Learn useful skills. Spend time outside. Do difficult things.

And when life tells you to slow down and settle for less, be a little defiant.
